The gathering of the class is in Merida Santiago hotel boutique. Under the enjoyment of some coffee or tea, you will decide, together with the chef, what you are going to prepare for lunch. You will choose an entrance, a main dish and a desert. Some of the dishes are very unique to the Yucatan region and difficult to find outside of the peninsula, while others are eaten throughout Mexico. The Yucatecan and Mexican cuisine include an enormous amount of delicious dishes. The influence of ancient Mayas, who left a huge legacy that can be felt in many aspects of daily life in Yucatan, is especially noted in the cuisine. The included refreshing beverages will be limonada and hibiscus flower tea.

After we know what is on the menu, we will walk to the Santiago Market which is about two minutes away. Santiago market is the local market of the Santiago neighborhood, the oldest neighborhood of Mérida. The guide will explain in detail about some of the fruits and vegetables only produced in the Yucatan region, like the Achiote, the Pepita de Calabaza and the Chile Habanero. Also the ingredients for the meal that will be prepared later this day will be bought here. After having bought the ingredients, the tour will head to the kitchen of Merida Santiago hotel boutique for the cooking class.

While cooking, chopping, frying and preparing food in the Merida cooking lesson, the chef will explain some of the traditions of the local people, the influence of other cultures in Yucatan and the differences between the Yucatecans and the people from other parts of Mexico. Also you will learn some Spanish and Mayan words while tasting the delicious plates you have been preparing.

The class end with a delicious lunch served aside the pool.
